The ingredients needed to make Brown Rice Pongal:
  1. Get 3/4 cup Basmati brown rice
  2. Get 1/3 cup split green gram (moong dal)
  3. Prepare to taste salt
  4. Get 3 & 1/4 cups water

  6. Make ready 1/2 tsp. mustard seeds
  7. Make ready 1-2 dry red chilies, broken
  8. Get 1-2 sprigs curry leaves
  9. Prepare 1 tsp. grated ginger
  10. Get 1/2 tsp. whole peppercorns
  11. Prepare 1 tsp. urad dal (split black gram)
  12. Get 1 tbsp. chana dal (Bengal gram)
  13. Get 1/4 tsp. asafoetida
  14. Make ready 1/2 cup cashew nuts
  15. Take 2 tbsp. ghee

You can substitute rice with brown rice, millets, steel cut oats or quinoa. you will have to soak them. Here's my family's recipe for Chakkara Pongal, which I have made a tad healthier using brown / semi polished rice from Phalada Agro and I am happy to use their dark and very flavourful organic jaggery. This pepper cumin rice is not only easy to make but has lot of medicinal properties. Cumin and pepper has antioxidant and antibacterial properties and is used to cure common cold, mild digestive problems.

Instructions to make Brown Rice Pongal:
  1. Wash the rice and dal 2-3 times and then soak in sufficient water preferably overnight. Drain and keep aside for 10 minutes.
  2. Heat 1 tbsp. ghee in a pan and saute the drained rice and dal for 2 minutes. Now add water and salt and pressure cook for 5-6 whistles on a low flame. Let it cool down before you open the lid.
  3. Heat the oil in a pan and temper with dry red chilies and mustard seeds. After it stops spluttering, add the curry leaves. urad dal, chana dal, peppercorns, ginger, asafoetida and the cashew nuts. Saute for a few seconds and then switch off the flame.
  4. Pour this tempering over the prepared pongal along with ghee. Serve with coconut chutney.
