  9. Make hole in all éclairs from one side and forcefully insert cream with piping bag.
  10. Now dip in chocolate. Éclairs are ready.

In a large saucepan, bring water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Combine water, butter and sugar in a medium saucepan and bring to a boil; stir until butter melts. Add all flour at once and quickly stir with a wooden spoon until dough comes together. After the pudding is set up and the cream is whipped, gently fold them together or stir on low speed in the mixer.
