Traditional Konkani dish with minimum spices seasoned with garlic. goes absolutely well with rice. Mochai it is called as Butter Beans in English, Amarapayar in Malayalam Avarekalu in Kannada and Vaal in Hindi. In Karnataka Avarekalu is seen everywhere during the winter. Sagu in Karnataka means a gravy cooked with Freshly ground coconut along with spices.
Steps to make Butter Beans Gravy:
- In the cooker add oil. Add cinnamon stick, star anise and bay leaf. Cut onion length wise and add them. Once it turns golden brown add ginger garlic paste and curry leaves. Once the raw smell goes add tomato and a pinch of salt and allow it to cook till it starts leaving oil in the sides
- Add the butter beans and mix well. Add all the spice powder and add 1 cup of water and required amount of salt. Pressure cook for 2 whistles
- While it's getting pressure cooked. Prepare the coconut paste and it's prapared by adding the coconut in the blender and it's optional that one can also add half spoon of cumin seeds and lil water and make a fine paste.
- Once the pressure is out open the cooker add the coconut paste keeping the gas in sim. Mix the paste well and garnish with coriander leaves and serve with rice or chapati.
Sagu is made out of almost all the veggies. It is served along with Poori ,Chapatti or Roti. Today I am sharing a sagu with Avarekalu/Field. Butter Beans Kurma is a great side dish for Poori,Chapathi, Idli, Dosa etc. I made Butter Beans Masala and Amma suggested me to make kurma with the remaining butter beans as its a great combo and yes it worked so well.
