Serve the hot polenta chips with some extra Parmesan grated on top, and the pesto dip on the side. Slice the tube of polenta in half lengthwise, then slice each half in half lengthwise again. Add the butter, salt and pepper and stir to dissolve.

To get started with this recipe, we have to first prepare a few ingredients. You can have polenta chips using 7 ingredients and 5 steps. Here is how you can achieve that.
The ingredients needed to make Polenta Chips:
- Take 2 cups vegetable Stock
- Get 2 cups Water
- Make ready 25 g Butter
- Get 1/2 tsp Salt
- Take 1/2 tsp Chopped rosemary, plus extra for garnish
- Prepare 2 cups Polenta
- Get Add Parmesan
Spray lightly with the spray oil. Pour the polenta onto a plate, use a spatula to shape into a cake - keeping it quite thick - and leave to cool completely. Once cool cut into chips and place on a non-stick baking tray. In a medium pot over high heat, add the milk and vegetable broth and bring to a boil.
Steps to make Polenta Chips:
- Line a tin with plastic wrap.
- Place stock, water, butter, salt and rosemary in a large pot. Bring to a simmer then, while stirring with a whisk, pour in polenta in a steady stream. Continue to whisk until mixture is thick. Add parmesan.
- Spoon and pat down polenta into tin. Cover polenta and allow to cool completely.
- Preheat oven to 200C.
- Unwrap polenta and cut into even-sized chips. Line a baking tray with paper. Place chips on to paper and bake for 30 minutes. I don't use oil but you could I guess.
Add the butter, salt, pepper, oregano, thyme, and rosemary and stir until well-combined. Arrange on a baking tray lined with foil and sprayed generouly with cooking spray. Carefully fry the polenta in batches (for about four to five minutes) and drain on paper towels. Cut the polenta into chip-sized batons and spray/brush the top with a little more oil. Serve with the garlic yoghurt dipping sauce.
