Add the garlic, ginger, onion, bell pepper, and broccoli. Then take a block of tofu and squeeze some of the water out so it can absorb flavours better. Cut the tofu block into small cubes and put them into a bowl. Add the cooked chickpea noodles and sauce mixture, folding gently to combine.
Instructions to make 10 minute soba special - vegan:
- Cook the soba according to the packet. When it’s ready, drain and rinse in cold water and set aside.
- In a jug, mix the miso and water until the miso is dissolved.
- Heat the oil in a pan on medium-hot heat. Add the spring onions and ginger. Cook for 2 mins.
- Add the mushrooms and sauté for 2-3 mins.
- Add the tofu and sesame seeds. Sauté for 1-2 mins.
- Turn the heat down to low. Add the miso/ water. Stir the tatsoi through and leave for 1-2 mins.
- You can add the soba to the tofu/ veg soup before serving. Or put the soba into bowls and then add the soup. Sprinkle with shichimi. Enjoy 😋
