To Make the Sauce: In a small saucepan mix coconut cream, onion, salt, chilli, lemon juice, and the cornstarch (mixed to a paste with a little of the cold coconut cream).

- Put the oil in a hot sufuria,let it heat and then add your onions
- Brown them abit and add ginger n garlic,continue stirring so as it doesn't stick in the sufuria
- Add your Royce cubes as your stir then add your tomatoes let it cook
- When ready add your generous coconut and bring it to boil
- Once it has boiled for 5mins,add your deep fried fish
- Cover it and let it cook for a while then add your Hoho,let it cook for 2mins and your fish is ready.
Bring the mixture to a boiling point, stirring all the time. Do not allow sauce to boil hard as it will become lumpy. Add fish, chillies, ginger and lemon juice to stock. Simmer gently for a few minutes until the fish becomes opaque and tender. Stir in the coconut cream carefully until smoothly blended.
