Steps to make Tomato sauce:
  1. bring the onion and oil in a medium pot to simmer on the stove top.
  2. Remove the top part of the tomatoes where the stems where, quarter them, add brown sugar(sugar brings out the taste of the tomatoes), salt and pepper.
  3. Cook the onions till translucent then add the tomatoes and put the lid on the pot.
  4. Leave covered on low heat untill the tomatoes are cooked soft, use a fork/masher to break up and mush the tomatoes
  5. Add the tomato paste, tomato sauce and basil to the pot and mix well, leave to simmer for a additional 10-20min.
  6. Sauce can be left to simmer until ready to serve, just stir occasionally. Serve with your favourite pasta dish. If you want hotter version remove the basil and add a chopped chillie or a table spoon of dried chilli pieces to the onions when cooking them soft, also add a teaspoon of hot sauce when you add the tomato paste.
